01The hearth

Southern Lebanese village recipes, a real charcoal hearth, and a room that never asks you to rush.

Beirut Bodega began as a takeout kitchen on King West. The food was right, the setting was not: no seats, no room, none of the noise of people sharing a table.

So Ali closed it and rebuilt it on Geary Avenue, around fire. Every skewer and every steak meets live coals. It takes longer. That patience is the point.

On slower midweek nights the kitchen releases a limited micro-batch. Spiced Lebanese fish over caramelised onion rice, or a 12-hour charcoal lamb shoulder. One table's worth at a time. When it's gone, it's gone.
